Perfect balance of flavor

ingredients

2 salmon steaks cut in half skin on
1/4 cup pure maple syrup
2 tbsp soy sauce
3 tbsp fresh ginger minced
1-2 green onions diced fine
1 tbsp butter

directions

In a container large enough to fit the fish in one layer, mix syrup, soy sauce and ginger. Add fish and coat well. Marinate fish for at least four hours and up to a day in the refrigerator flipping every so often.

Heat oven to 365 degrees.

In a large oven-safe frying pan heat butter and sear salmon on the tops. Flip salmon so the skin is down and cook for about two minutes.

Pour any remaining sauce over the tops and put the pan in the oven. Cook in oven until done to your liking. (I like salmon slightly rare in the center, which took about five minutes)

Remove pan from oven, cover and let fish rest for 10 minutes, it will continue to cook a bit so do not overcook it in the oven.

Garnish with green onions and serve.
