Great for BRUNCH!

ingredients

  • 1/2 ripe avocado
  • 1 tbsp lemon juice
  • 1 medium-soft taco size tortilla
  • 1 Large egg
  • cooking spray
  • Garlic Powder (to taste)
  • Salt and Pepper (to taste)
  • Red Pepper Flakes (to taste)
  • Ground Cumin (to taste)

directions

  1. Cut your avocado in half and mash it
  2. Add 1 tbsp fresh lemon juice and the seasonings to your liking and give it a stir.
  3. Now take your tortilla….and toast it.  I used my panini press because I knew it would get it nice and crispy, but you could pop them on the rack in the oven, or heat it until crispy in a skillet.
  4. Now spread that yummy avocado mixture on top
  5. Cook your egg to your liking…poached, fried, hard-boiled & crumbled, etc. I cooked mine in a small skillet with a little cooking spray.
  6. Plop that yummy, warm egg right in the middle of your avocado & ENJOY!!
