Ingredients
1 T. butter or olive oil
1 egg
2 egg whites (or 1 additional egg)
1/4 cu. fresh cilantro, chopped
1/8 t. garlic salt
2 T. grated parmesan cheese
1 roma tomato or 1/4 cu. other tomato
Directions
In a small mixing bowl whisk together eggs, cilantro, garlic salt, and grated parmesan cheese.
In a small frying pan over medium heat, melt butter or heat olive oil. When pan is fully heated add egg mixture and cook thoroughly.
You can either fold the tomatoes into the egg to form an omlet or if you scrambled the eggs, add the tomatoes as a garnish once plated.
