Ingredients

1/2 pkg spaghetti noodles (or whatever noodles you have on hand)
1 lb bacon chopped and fried crispy
2 bunches (or 1 1/2 whatever your liking) green onion diced
2 cloves garlic minced
8 egg yolks
1 cup half and half, 1 cup milk (or 2 cups of milk)
3/4 cup parmesan cheese
salt and pepper to taste
pinch of nutmeg (optional)

Directions

1. cook noodles as directed (drain, reserve 1 cup of pasta water, set aside)
2. fry bacon until crispy, drain- leaving a tiny amount of grease for frying up onion
3. add green onion and garlic to bacon and saute
3. add noodles to bacon mixture
4. beat together egg yolks, milk/half and half, parmesan cheese, salt and pepper and nutmeg
5. turn heat to med-low and toss in egg mixture with bacon/pasta mixture
6. if dry add pasta water small amounts at a time and toss until to your liking
7. top with extra parmesan cheese and serve with garlic bread
