                        4-5 lb standing rib roast
1 tbsp kosher salt
1.5 tsp ground pepper
1 tsp minced garlic
1.5 tbsp chopped italian parsley
1/3 cup plain bread crumbs
1tsp dried rosemary
2 tbsp Dijon mustard
                    
                    
                        
directions
                        1. Preheat oven to 325 F. Season roast on all sides with salt, pepper and garlic.
2. Place roast on rack in roasting pan. Bake 1.5 hrs
3. Chop parley. Combine with bread crumbs and rosemary.
4. Remove roast from oven. Coat with mustard, then bread crumb mixture.
5. Bake 1 more hour or until roast is 145 F (med-rare) up to 170 F (well-done). Use meat thermometer to accurately ensure doneness
6. Transfer to cutting board. Let stand 10-15 minutes before slicing.
