Microwave Cheesy Tomato Eggs

Ideal for leftover cold rice. Quick, easy, and relatively easy rice with tomatoes and an egg for the broke but starving college student

ingredients

tomato, egg, rice, cheese, oil, salt, pepper

directions

1. Use leftover rice OR make rice: Cook the rice either in a rice cooker or in a pot with water. Add oil and salt to the water. (The rice will come out silky with some taste already.)
2. Place rice in microwavable container. Chop one or two tomatoes and place on top.
3. Crack an egg directly on top of the tomatoes.
4. Sprinkle on the cheese. (optional but it's good!)
5. Add salt and pepper.

I microwaved it for 3 minutes on high, the cheese melted, but egg did not cook, so i stirred all and then added 2 more minutes. This was a great meal.

I had mine in for 3, but I think 1 1/2-2 minutes should be enough to melt the cheese and cook the egg.
