                        ingredients
                        
- 3 cups mashed potatoes, chilled or at room temperature
 
- 1/2 cup shredded cheddar cheese
 
- 2 medium scallions, very finely chopped
 
- 2 medium garlic cloves, minced or pressed
 
- 1 egg, lightly beaten
 
- 1/3 cup all-purpose flour
 
- 2 tablespoons olive oil
 
- Salt, to taste

- Mix together all ingredients but oil and salt in a large mixing bowl and set aside.
 
- Warm oil in a large frying pan over medium heat.
 
- Drop 3-inch mounds of potatoes onto skillet and gently press down to flatten. Cook on each side for 4 to 5 minutes until crisp and golden brown. Transfer to a paper towel lined baking sheet to drain. Season with salt and pepper to taste.
