Easy Potato Salad

It's really easy... and REALLY GOOD!! No Mayo

ingredients

  • 2 lb. small red potatoes, white, unpeeled
  • 2 green onions, thinly sliced
  • 2 stalks celery, finely chopped
  • 1/4 cup cheddar cheese shavings
  • 1 tbsp. balsamic vinegar
  • 3 tbsp. Extra virgin olive oil
  • 1 tsp. Dijon mustard
  • 1 tbsp. of fresh herbs (basil, parsley and chives, finely chopped)

directions

  1. In a pot of salted water, put the whole potatoes, bring to a boil, cover and boil over medium heat about 20 minutes. Drain and place on a rack or plate.
  2. Pierce the potatoes to allow steam to escape and cool.
  3. Cut into quarters and place in a large bowl with the green onions, chopped celery and cheese shavings.
  4. Combine all dressing ingredients in an airtight container and stir well to emulsify the dressing.
  5. Season and pour over the potato salad.
  6. Mix gently and serve.
