It's really easy... and REALLY GOOD!! No Mayo
ingredients
- 2 lb. small red potatoes, white, unpeeled
- 2 green onions, thinly sliced
- 2 stalks celery, finely chopped
- 1/4 cup cheddar cheese shavings
- 1 tbsp. balsamic vinegar
- 3 tbsp. Extra virgin olive oil
- 1 tsp. Dijon mustard
- 1 tbsp. of fresh herbs (basil, parsley and chives, finely chopped)
directions
- In a pot of salted water, put the whole potatoes, bring to a boil, cover and boil over medium heat about 20 minutes. Drain and place on a rack or plate.
- Pierce the potatoes to allow steam to escape and cool.
- Cut into quarters and place in a large bowl with the green onions, chopped celery and cheese shavings.
- Combine all dressing ingredients in an airtight container and stir well to emulsify the dressing.
- Season and pour over the potato salad.
- Mix gently and serve.
